2023 Domaine Moreau-Naudet Vaillons Chablis Premier Cru, France 1.5L Magnum Ryme Wine Cellars Vinification: 2-week fermentation in stainlessThis cuve comes from 6077 year old Chardonnay vines across four parcels within the Vaillons sector (including Schet), where shallow clays over Kimmeridgian limestone and mainly morning sun give a tense, mineral profile. Fermentation is with native yeasts and split between stainless steel (about 70%) and seasoned oak (old 228 L barrels plus a few 600 L foudres), followed by lees aging to preserve purity and texture. This wine arrives late Sept 2025.
