Antonio de la Riva Yeast ambientFrom the young vines planted on the Sur Priault lieu dit in the Chablis area, this 100% Chardonnay was hand harvested and fermented with native yeasts, then aged on fine lees in mostly stainless steel with a small portion in older oak and bottled unfined, unfiltered with minimal sulfur.
