Viticulture: Organic (Ecocert, 2019) and biodynamic methods, guyot pruning. Vinification: No added SO2 during vinification. 100% de stemmed, 4 8 day pre fermentation cold maceration, ambient yeast fermentation with punchdowns and pump overs depending on the vintage.
